What puntilla is

Puntilla is a small squid, Alloteuthis subulata, found in the Northeast Atlantic and the Mediterranean. It is recognised by its slender body ending in a point, which gives it its Spanish name, and by a commercial size of just a few centimetres.

In Spanish cuisine it is synonymous with frying: puntillas are dusted in flour and fried whole, uncleaned, and eaten in a single bite. The flavour is mild and briny and the texture tender, as long as they are fried quickly at the right temperature.

Size 100/200 pieces per kilo

We supply puntilla whole, as caught, in size 100/200: between 100 and 200 pieces per kilo, a uniform size that fries evenly and looks good on the plate. Since it is cooked whole, there is no cleaning loss.

Packing and glazing are adapted to each customer and market; tell us what you need. For larger portions, our cleaned baby squid is the natural choice within our frozen squid range.

Frozen baby squid for foodservice all year round

Puntilla is a seasonal species with irregular catches. Buying it frozen keeps it on the menu all year, with stable sizing and no dependence on daily landings.

At Tunatunes our entire range is frozen and the cold chain is controlled at every stage. From Vigo, Spain, we serve distributors, retail chains, importers and foodservice buyers in more than 15 countries. For a quote, contact us through this page or our contact page.

Frequently asked questions

Does puntilla need cleaning before cooking?

No. Puntilla is cooked whole, usually floured and fried. Simply thaw, drain and dry it well before dusting it in flour.

What does size 100/200 mean for puntilla?

It means there are between 100 and 200 pieces per kilo. It is a uniform size that fries evenly and gives attractive portions.

What is the difference between puntilla and baby squid (chipirón)?

Puntilla is a smaller squid (Alloteuthis subulata) that is fried whole. Chipirón is a young Loligo squid, somewhat larger, usually served cleaned, griddled or stuffed.

How should puntilla be thawed so it fries well?

Thaw it in the refrigerator at 0–4 °C in a colander so the water drains. Pat it dry before flouring and fry it in very hot oil in small batches.
