Loligo vulgaris: the European squid
Chipirón is the Spanish name for young European squid, Loligo vulgaris, a species of the Northeast Atlantic and the Mediterranean that is a staple of northern Spanish cuisine. The name is used for small pieces in particular.
It is one of the most prized squids in the kitchen for its fine, tender, delicately flavoured flesh. Unlike thicker-mantled species, Loligo vulgaris calls for short cooking times and shines in simple preparations where the product takes centre stage.
Cleaned baby squid in size 20/40
We supply cleaned, frozen baby squid in size 20/40, meaning 20 to 40 pieces per kilo: a portion size that works both griddled and stuffed. Because it arrives cleaned, kitchens save on gutting and reduce waste.
Packing, glazing and exact presentation are tailored to each customer's specification; just ask. For a smaller frying format, see our frozen puntilla, and for larger pieces, our cleaned squid tubes.
A menu favourite for foodservice
Cleaned baby squid is a menu staple in seafood restaurants and tapas bars: griddled, with onions, in its ink or stuffed. The frozen version ensures year-round availability and consistent quality from one order to the next.

Baby squid (chipirón) is a young, small squid. Ours is Loligo vulgaris, the European squid, in size 20/40 pieces per kilo, more tender and finer-fleshed than large squid.
What does size 20/40 mean?
It means there are 20 to 40 baby squid per kilo. It is a versatile portion size for griddling, stuffing or stewing.
Is the baby squid fully cleaned?
Yes, it is supplied cleaned and ready to cook. If you need a specific presentation, let us know through the form on this page and we will confirm what we can offer.
How do you cook frozen baby squid so it stays tender?
Thaw it in the refrigerator at 0–4 °C, dry it well and cook it on a very hot griddle for a short time. In stews, by contrast, long slow cooking works best.
