What frozen cooked mussel meat is

It is the Galician mussel (Mytilus galloprovincialis) already cooked and taken out of the shell, ready to use. It is frozen straight after cooking to keep the texture, the orange colour and the flavour of freshly cooked mussels.

For professional buyers the benefit is clear: no shells to handle, less waste and a precise yield per kilo. The meat comes from the rafts of the Galician rías, the farming system that has made Galicia the world’s mussel benchmark and that the sector recognises through the Mexillón de Galicia PDO.

Raw material for the canning industry

Mussels in escabeche, a lightly spiced marinade, are one of the great classics of Spanish canned seafood, and cooked mussel meat is where they start. Canneries use it for escabeche, in brine, in sauce or in oil, as well as for pâtés and spreads, which is why they pay close attention to consistent sizing, whole pieces and meat colour.

The same meat is a staple ingredient for ready-meal producers: rice dishes, frozen paella, seafood salads, pasta and sauces. We work with importers and distributors supplying these industries, adapting size, glazing and format to each customer’s production line.

Sizes: pieces per kilo

Mussel meat is graded by the number of pieces per kilogram. Typical market ranges run from around 100/200 pieces per kilo for the largest meats to 300/500 for the smallest:

  • Large meats: for premium canned products where every piece shows in the tin, and for plated dishes.
  • Medium and small meats: for ready meals, fillings, sauces, rice dishes and salads.

Exact size, tolerances, glazing and packing are agreed to each customer’s specification. We also supply Chilean mussel meat, a common alternative when volume or price is the deciding factor.

Storage and kitchen use

Keep the meat at −18 °C or below until use. Thaw slowly in a cold room or refrigerator at 0–4 °C. As it is already cooked, add it at the end of the recipe and heat it through for a few minutes; overcooking makes it tough. Processors can use it straight from frozen, depending on their process.

Once thawed, do not refreeze. Complete your range with our whole cooked Galician mussels and the rest of our Galician mussels.

Frequently asked questions

Is the mussel meat already cooked?

Yes. It is cooked, removed from the shell and frozen. In the kitchen it only needs thawing and adding at the end of the recipe, or heating through for a few minutes.

Is it suitable for canned mussels in escabeche?

Yes, it is the raw material for canned mussels in escabeche, brine or sauce. For canneries, size and piece consistency are set to each customer’s specification.

What sizes of mussel meat are available?

Mussel meat is graded in pieces per kilo, with typical market ranges from 100/200 to 300/500. The lower the figure, the larger the piece. The exact size is agreed for each order.

How does Galician mussel meat differ from Chilean?

They are different species: the Galician mussel is raft-grown Mytilus galloprovincialis, while the Chilean mussel is Mytilus chilensis. Galician meat is prized for its flavour and colour; Chilean meat is a common alternative for availability and price. We supply both origins.
