What whole cooked Chilean mussels are
These are farmed Chilean mussels, Mytilus chilensis, cleaned, cooked in the shell and frozen whole. Both shells stay closed or slightly open with the meat inside, so the mussels keep their juices and natural look.
For professional buyers, they are an easy way to have shell-on mussels all year round, without depending on the season or the logistics of live product. If you only need the meat, see our IQF Chilean mussel meat.
Sizes and formats
Whole mussels are graded in pieces per kilogram. Ranges such as 30/40, 40/60 or 60/80 pieces per kg are common in the market: the larger grades for dishes where the mussel takes centre stage, the smaller ones for paella, seafood platters and portioned dishes.
- Whole, in both shells.
- Bulk packing or retail-ready formats.
- Glazing and net weight to specification.
Size, packing and labelling are adapted to each customer and each destination market.
Who buys it: retail, foodservice and processors
Frozen whole cooked mussels are bought by retail chains for their frozen aisle, by importers and distributors supplying foodservice, and by restaurants and caterers who want shell-on mussels ready to serve. They are also used in ready meals and frozen paella.

Storage and preparation
Keep the mussels at −18 °C or below until use. As they are already cooked, they only need heating through: steamed, sautéed with a sofrito, in a sauce or added to rice for the last few minutes.
If you prefer to thaw them first, do so slowly in a cold room or refrigerator at 0–4 °C. Once thawed, they should not be refrozen.

Frequently asked questions
Are the whole mussels cooked?
Yes. They are cleaned, cooked in the shell and frozen. They only need heating before serving.
How do they differ from mussel meat?
Whole mussels keep both shells and have more presence on the plate. Mussel meat comes shucked and individually frozen, with no waste, for recipes where the shell is not needed.
Which sizes of whole mussels do you supply?
The usual market grades in pieces per kg, such as 30/40, 40/60 or 60/80. The exact range is agreed to the customer’s specification.
How are they packed?
Packing is adapted to each market and channel: bulk for foodservice and processing, or retail-ready formats for supermarkets. Tell us what you need and we will send a proposal.
