What is flower octopus?
Flower octopus is frozen with its tentacles spread evenly around the head, so that seen from above it looks like a flower. The presentation protects the tentacles, makes the piece easier to handle in the kitchen and gives a neat finish on display and on the plate.
Unlike our whole ungutted octopus, this format is already gutted, with the viscera removed from the head. That means less waste at destination, less handling and a more predictable yield per kilo, which matters to restaurant groups, central kitchens and processing units.
Sizes T3 to T6 for professional kitchens
We focus this format on the middle of the size scale, T3 to T6, the grades most in demand from foodservice and processing: large enough to portion well, yet easy to handle in pots and cookers. The T scale grades octopus by individual weight from largest to smallest, and the exact ranges for each grade are confirmed on every offer.
For larger grades or uncleaned product, our whole octopus from T1 to T8 covers the full scale. If your menu only uses the most valued part, our raw octopus tentacles are the most direct option.
Storage, thawing and packing
Keep gutted flower octopus at −18 °C or below until use. To protect the texture, thaw it slowly in a cold room at 0–4 °C and then cook it to your usual recipe; prior freezing helps the meat turn out more tender. Once thawed, raw octopus should not be refrozen.
All our product is frozen and shipped with a controlled cold chain. Packaging type, glazing and carton weight are defined to each customer's specification: tell us what you need through the form or our contact page.
