Rock octopus: the common octopus of rocky seabeds

Rock octopus is the trade name for the common octopus, Octopus vulgaris, a species that lives on rocky and gravel seabeds in coastal waters. It is the benchmark octopus in Spanish cuisine and the one chefs look for in traditional recipes, thanks to its firm flesh and pronounced flavour.

This format is supplied whole, ungutted and frozen, just like our whole octopus from T1 to T8, with one key difference: the pieces are graded within a narrow weight band, giving a consistency that is hard to achieve when buying across broad size grades.

Graded at 1 to 2 kg for consistent pieces

Working with pieces between 1 and 2 kilos makes it possible to standardise cooking times, portions and presentation. It is a convenient size for restaurants, which can serve the octopus whole or by the tentacle with a uniform look, and for cooking plants and processors that need even batches so all the product reaches the same point.

Consistency also simplifies costing: with a tight weight band, yield per kilo bought is far more predictable. If your business only uses the tentacles, consider our raw octopus tentacles at 150–250 g; if you prefer a cleaned piece, see our gutted flower octopus.

From freezer to pot

Keep rock octopus at −18 °C or below and thaw it slowly in a cold room at 0–4 °C, allowing enough time for the size of the piece. Freezing helps the meat turn out more tender after cooking, so it works in favour of the final quality. Once thawed, raw octopus should not be refrozen.

All our product is frozen and the cold chain is controlled from start to finish. Packing, glazing and carton weight are set to each customer's specification. Browse the other formats in our octopus range or get in touch through our contact page.

Uses of whole rock octopus, ungutted and graded

  • Galician-style octopus with uniform pieces
  • Whole grilled octopus
  • Batch cooking in cooking plants
  • Consistent portions for restaurants
  • Traditional recipes: stews, rice dishes and pies

Frequently asked questions

What is rock octopus?

It is the trade name for the common octopus (Octopus vulgaris), a species of coastal rocky seabeds in the eastern Atlantic and the Mediterranean. It is the most prized octopus in traditional Spanish cooking.

What does graded octopus mean?

All the pieces in the lot fall within a narrow weight band, in this case 1 to 2 kg. That gives uniform pieces, even cooking times and a more predictable yield.

How does it differ from whole octopus T1 to T8?

Both are whole, ungutted and frozen. Whole octopus is offered across the full T1 to T8 size scale, while this format concentrates on 1–2 kg pieces for buyers who need one specific size.

How should rock octopus be thawed?

Slowly, in a cold room at 0–4 °C, for as long as the size of the piece requires, then cooked to your recipe. It should not be refrozen raw.
