What PDTO shrimp is
PDTO stands for peeled, deveined, tail-on: the vannamei shrimp is beheaded, peeled and deveined, but the tail, meaning the last shell segment and fan, is left on. The piece is clean to eat and still shows the characteristic red tip once cooked.
The tail has a practical role, acting as a handle for dipping or eating by hand, and a visual one, making the dish instantly recognisable. If you do not need the tail, peeled and deveined shrimp (PD) gives fully usable meat.
Sizes 21/25 to 41/50 for presentation
As with other peeled formats, sizes are usually counted in pieces per pound; please confirm the unit in each specification. We offer PDTO in medium and large sizes, where tail-on presentation makes sense: 21/25 is a generous piece for tempura, skewers or main courses, and 41/50 fits appetisers, finger food and buffets.
Yield is very high, as only the small tail portion is left at the table. For volume cooking or recipes where shrimp is chopped, a tail-off format is usually more cost-effective.
Freezing and packing for your channel
PDTO is mainly traded individually quick frozen (IQF), which makes exact portioning easy, though other formats are possible. Glazing and packing are adapted to the channel: a catering case is not the same as a retail pack.
We define these details with each customer from their specification. Tell us the size, use and packing you need through our contact form and we will prepare a proposal.

Frequently asked questions
What does PDTO mean?
Peeled, deveined, tail-on: shrimp that is peeled and deveined but keeps the last segment and tail fan. It is easy to eat and keeps a refined look on the plate.
Why leave the tail on?
It lets diners pick up the shrimp by hand, for example in tempura or cocktails, and makes the dish visually recognisable. For chopped preparations, tail-off PD shrimp is usually the better choice.
Which PDTO sizes do you offer?
From 21/25 to 41/50, usually counted in pieces per pound. These medium and large sizes suit tail-on presentation best. Please confirm the unit in your specification.
Can you pack it for foodservice or retail?
Yes. Packing, glazing and freezing method are adjusted to each customer and channel specification. Tell us what you need and we will send a proposal.
