Frozen peeled undeveined vannamei shrimp (PUD)

Litopenaeus vannamei

Peeled, headless vannamei shrimp that keeps the dorsal vein (PUD), in sizes from 31/40 to 71/90. The most economical peeled option: ready-to-use meat for processors, ready meals and volume cooking, where shrimp is usually chopped or blended into the recipe.

PUD shrimp: peeled, undeveined

PUD stands for peeled, undeveined: the vannamei shrimp is beheaded and peeled, but the dorsal vein is left in. Skipping that processing step gives a sharper price than peeled and deveined shrimp, while still delivering shell-free meat ready to cook.

In small and medium sizes the vein is thin and barely noticeable, which is why PUD is common in recipes where shrimp is chopped, minced or mixed. When whole-piece presentation matters, the alternative is peeled and deveined shrimp (PD).

Sizes 31/40 to 71/90 for volume cooking

Sizes are usually counted in pieces per pound, and the unit should be confirmed in each specification. PUD focuses on medium and small grades: 31/40 works for stir-fries and rice dishes, and 71/90 for fillings, croquettes, salads, sauces or pizzas, where the number of pieces per portion matters more than individual size.

It is a format for buyers who process or cook in volume and want the most meat per euro. For uses where the shrimp takes centre stage, compare it with large headless shell-on shrimp (HLSO).

Frequently asked questions

What is PUD shrimp?

Peeled, headless shrimp that keeps the dorsal vein (peeled, undeveined). Skipping deveining makes it more economical than PD, while it remains ready-to-cook meat.

Does PUD shrimp need deveining?

Usually not in small and medium sizes, where the vein is thin and barely noticeable, especially if the shrimp is chopped. For whole-piece presentation, PD is the better format.

Which sizes do you offer?

From 31/40 to 71/90, usually in pieces per pound. These medium and small sizes are the most used in processing and volume cooking. Please confirm the unit in your order specification.

How should it be stored?

At −18 °C or below until use. Thaw in a chiller at 0 to 4 °C or under cold water in a sealed bag. In many recipes it can be cooked straight from frozen. Do not refreeze.
