What skipjack tuna is
Skipjack is a medium-sized tuna that forms large schools in warm waters across all oceans. It is easy to recognise by the dark stripes running along its belly. The meat is pink to red, with a pronounced flavour and less fat than other tuna species.
It is the most widely caught tuna in the world and the basis of much of the canned product sold as light tuna. Because of its size and consistency, whole frozen skipjack is the format most requested by processors, who then cook, clean and pack it on their own lines.
Frozen skipjack for canneries and processors
We handle whole skipjack with the professional buyer in mind: pieces from 1.8 to 3.4 kg, a practical range for industrial processing and cooked loin yield. The cold chain is controlled from start to finish, so the fish reaches the plant in the condition in which it was frozen.
Besides canneries, we work with importers and distributors who need a steady raw material for their local industry. If you are looking for a larger fish or a different fat content, see our frozen whole yellowfin tuna or frozen albacore.
Sizes, format and specifications
Skipjack is supplied whole, within the weight range shown. Size grading makes it easier to plan production and the yield of each lot.
- Weight per piece: 1.8 to 3.4 kg.
- Format: whole round.
- State: frozen, at −18 °C or below.
- Packing and other specifications: to customer specification; ask us.
If you need a specific size or a different format, include it in your quote request and we will tell you what we can offer.
Storage and thawing
Frozen skipjack should be kept at −18 °C or below until use. Slow thawing in a chiller at 0–4 °C is recommended, so the flesh loses as little moisture as possible and keeps its texture. In industrial settings, thawing is adapted to each cooking and cleaning process.
Once thawed, the product must not be refrozen. You can see the rest of the range on our frozen tuna page.
Uses of whole skipjack tuna
- Raw material for canned light tuna.
- Production of precooked tuna loins.
- Ready meals and salad manufacturing.
- Supply for importers and industrial distributors.
- Traditional cooking: stews and tuna-and-potato dishes.
